Chicken inasal is Bacolod's most famous food contribution to the Philippines. It's grilled chicken marinated in calamansi (Philippine lime), vinegar, garlic, ginger, and annatto oil that gives it the signature orange color. Served with garlic rice, atchara (pickled papaya), and a calamansi-soy dipping sauce.
The authentic experience is at Manokan Country — a string of 12+ family-run inasal stalls clustered together near the Bacolod public market. The chicken is freshly grilled to order and costs PHP 180-280 depending on cut.
Order pecho if you want lean, paa if you want juicy. Eat with your hands (Filipino style) — that's how it's done locally.
