La Paz Batchoy
Iloilo's most famous noodle soup.
La Paz Batchoy is the noodle soup that defines Iloilo cuisine — egg noodles in a rich pork-bone broth topped with chicharon (crispy pork crackling), liver, intestines, and bone marrow. It's heavier and richer than Manila's mami, and Ilonggos eat it for breakfast as easily as for dinner.
The dish originated in La Paz market in the 1930s. Today, the place to try the original is Ted's Old Timer La Paz Batchoy at the La Paz Public Market, where the recipe has been unchanged for 80+ years. A bowl costs PHP 80-150.
